Kombucha will brew between 16C and 37C however, an ideal temperature range for kombucha is more like 24C-30C. Lower than 16C will allow moulds to proliferate as the culture starts to go dormant. Higher than about 35 degrees celcius and the proliferation of yeasts begin to occur, which puts the ecology of your brew out of balance.
We highly recommend using a heat belt in the colder, winter months to maintain temperature and prevent mould. These can be purchased here.

Fantastic, I can now tell at a glance exactly what temperature my Kombucha is at so it doesn't get too cold or hot.
